Dealcoholization

InnoSolv ltd. develops and offers its own innovative dealcoholization method designed for the dealcoholization of wine. This new procedure uses low temperature nitrogen gas assisted distillation to ensure a gentle removal of the ethyl alcohol for a quality and enjoyable end product.

Separated outlet distillate can be kept for spirit usage or automatically diluted with water to an alcoholic strength below no tax excisable limits.

Main method strengts:

  • Gentle, mild wine treatment
  • Wine process temperatures 25 – 28oC – no thermal destructions
  • Short wine residence times – single pass work
  • Nitrogen process blanket during treatment – no oxidation
  • Compatibility with Resolution OIV-OENO 394A-2012 for non-alcoholic wines
  • Retains in product all non-volatile compounds and maximum non-volatile compounds
  • Option for keeping distillate alcohol content high – two products outlet
  • No pressures, vacuum, steam boilers, etc.
  • Low process temperatures allow heat pumping and green process

Wine changes during dealcoholization:

  • Reducing volume – up to 55% compared to inlet
  • Increasing total dry matter content – more dense taste
  • Increasing total acids content – more sour taste
  • Total sulfur degassing

These changes may imply post-processing adjustments to the outlet composition in order to achieve a desired organoleptic profile. The corrections are minimal when the goal is to lower the natural alcohol content and more substantial when the goal is to obtain a non-alcoholic wine. Post-processing may includes deacidification, filtration, sulfitation, water restoring, etc. to achieve the desired organoleptic characteristics and anti-microbial stability.
